Northern hotpot lives on sesame paste, and sesame paste is a texture problem before it is a flavour problem. This builder uses the 8:2 rule — eight parts sesame paste to two parts peanut butter — gives the warm water needed to loosen it in three stages, and covers four common versions including the old Beijing one with chive flower and fermented bean curd.
